On a crisp fall day, there’s not much better than warm stew filled with nutritious vegetables and hearty meat.
This Easy Beef Stew Recipe is adapted from an old community cook book and has become my favorite stew recipe because of its full flavor and ease to make.
It’s a delicious and healthy comfort food at only 5 Weight Watchers PointsPlus per serving.
Easy Beef Stew Recipe

- 1 lb. lean stew meat
- 2 cans Healthy Request tomato soup
- 2 cans water
- 2 Tbs. sugar substitute
- 4 Tbs. tapioca granules
- 2 cups uncooked carrots
- 1/2 cup uncooked celery
- 3 cups uncooked potatoes
- 1 onion
- Preheat oven to 275°.
- Cut the carrots, celery, potatoes and stew meat into bite sized pieces.
- In a large bowl, mix the tomato soup, water, sugar substitute, and tapioca. Add the carrots, celery, potatoes, and onion.
- Grease two 9x13 baking dishes. Divide the stew evenly between both dishes. Cover with aluminum foil.
- Bake for 3 hours.
